Chicken-Curry
Description
Chicken Curry is a flavorful and aromatic dish that’s a staple in many cuisines. This version features tender chicken simmered in a spicy, creamy curry sauce made with tomatoes, coconut milk, and a blend of spices. It’s rich, comforting, and pairs wonderfully with steamed rice or naan.

Ingredients
- 1 lb chicken breast or thighs, cubed
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup cilantro, chopped (for garnish)
- 1 tablespoon lemon juice
Steps
- Heat vegetable oil in a large pan over medium heat. Add the onions, garlic, and ginger. Sauté for 3-4 minutes until the onions are soft.
- Add the chicken cubes and cook until browned on all sides.
- Stir in the curry powder, cumin, turmeric, chili powder, cinnamon, salt, and pepper. Cook for 1-2 minutes to allow the spices to release their flavors.
- Add the coconut milk and diced tomatoes. Stir well and bring the mixture to a simmer. Cook for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Finish with lemon juice and garnish with chopped cilantro.
- Serve with rice or naan.
